For serious eaters both here and especially in Japan, ramen noodles are a religion. Here are our favorite spots that have gained some serious slurping traction.

When temps dip, we instantly crave noodles. And, when noodles pop into our heads, we almost always turn to Ippudo. The hip, East Village noodle joint serves up serious ramen like the Akamaru ramen, a bowl of noodles with red miso, black garlic oil, and ivory slices of Berkshire-pork. Ippudo always has a line, but it’s also always worth the wait.

Ippudo is located at 65 4th Avenue New York www.ippudony.com.

Expect zero pretenses at this tiny, basic EV noodle shop. Aptly dubbed “the ramen factory,” for other than a few standard apps, ramen is the key focus here and it’s damn good. Think flavorful mushrooms, fantastic broth, tender pork and perfectly textured noodles blended together to make every bite slurp worthy.

Minca is located on 536 East Fifth St. New York www.newyorkramen.com 212.505.8001.

Momofuku Noodle Bar

The long wait for this one got a little more enjoyable with the recent debut of its neighboring bar, Booker and Dax, where you can nosh on David Chang’s famous pork buns along with a killer cocktail while waiting for a seat. Momofuku Noodle Bar is most definitely the “hautest” of this bunch. See and be scene while enjoying a simple, forward thinking menu consisting of the Momofuku ramen with pork belly, pork shoulder and poached egg, the spicy miso ramen that blends together smoked chicken, scallion and sesame and the veg friendly ginger scallion noodles with pickled shitakes, cucumber and cabbage.

Momofuku Noodle Bar is located at 171 1st Ave. (bet. 10th and 11th) New York www.momofuku.com.

Republic offers up stellar noodles along with a scene that’s very different from the aforementioned. People-watch a plenty at this spot as it’s perched right in the heart of bustling Union Square. It’s cafeteria-esque atmosphere ain’t the best but Republic serves up decadent noodle and Thai-friendly dishes that do the job when a craving kicks in.

Republic is located at 37 Union Square New York www.thinknoodles.com 212.627.7172.

Dassara Brooklyn Ramen

Located on Smith Street in Carroll Gardens, Dassara Ramen specializes in serving up the staple Asian-influenced dish with a Brooklyn twist.By taking New York ritualistic combined with forward-thinking concepts and applying them to Japan’s sense of playfulness with food, owner, Josh Kaplan and Chef Marc Giroux have conjured up a ramen menu including items like the Dassara’s Deli Ramen that’s made with chicken broth, matzo balls, Canadian-style smoked meat and poached egg. The deli version of the noodle soup is by far one of Dassara’s best sellers but other takes that have gained slurping traction too are the mushroom ramen and the white clam mazemen which combines Manila clams, parsley, oil cured chilis and scallion pancakes.

Dassara Brooklyn Ramen is located at 271 Smith Street  www.dassara.com 718.643.0781.
